Baked gnocchi with kale pesto & ham
Indulge in the flavors of crispy baked gnocchi topped with vibrant kale pesto and savory ham. A perfect fusion of comfort and gourmet taste!
Ingredients:
- 85g kale
- 50g walnut pieces
- 150ml olive oil
- juice 1 lemon
- 50g parmesan, roughly chopped
- 2 x 500g gnocchi
- 4 thick slices ham, diced
- 125g ball mozzarella, drained
- 100g bag mixed salad leaves
Instructions:
- Preheat the oven to 200C/180C fan/gas 6. Combine the kale, walnuts, oil, lemon juice, and Parmesan in a food processor. Pulse the mixture until the kale is finely chopped. Boil a large pot of water and cook the gnocchi in two separate batches for 2 minutes each time.
- After draining the gnocchi well, transfer it to a baking dish. Mix in the kale pesto and ham. Tear the mozzarella into small pieces and scatter them over the gnocchi. Bake for 20-30 minutes or until the cheese is melted and bubbly. Serve with a side of salad leaves.
