Bacon and avocado macaroni salad
Delicious combination of crispy bacon, creamy avocado, and tender macaroni mixed with a flavorful dressing. Perfect for a quick and satisfying meal.
Ingredients:
- 2 cup elbow macaroni
- 1 cup mayonnaise
- 1 cup milk
- 1/4 cup apple cider vinegar
- 1/2 tablespoon brown sugar
- 1/2 minced red onion
- 1/2 cup minced celery
- 2 tablespoon minced fresh parsley
- 1 medium avocado, peeled, pitted and diced
- 4 slices cookd and crispy bacon
- salt and pepper, to taste
Instructions:
- Heat water in a medium saucepan until it boils, then add a pinch of salt. Cook the macaroni in the boiling water for 15 minutes until it is cooked. Drain the macaroni and transfer it to a medium-sized bowl. Pour apple cider vinegar over the hot macaroni and allow it to cool for about 10 minutes. In a small bowl, mix together half a cup of mayonnaise, half a cup of milk, brown sugar, salt, and pepper. Combine this mixture with the pasta and let it cool completely. Once cooled, mix in the remaining milk and mayonnaise, along with diced onion, celery, parsley, and avocado. Sprinkle crispy bacon on top before serving the dish cold.
