Ingredients:
- 2 cups cups green leaf lettuce, torn into bite size pieces
- 2 cups arugula
- 1 cup cherry tomatoes, halved
- 1 medium Fuji apple or green apple, halved and thinly sliced
- ¼ of a medium red onion, thinly sliced
- 2 tablespoons crumbled blue cheese
- 4 teaspoons chopped pecans. toasted
- 2 tablespoons cider vinegar
- 4 teaspoons olive oil
- 1 tablespoon honey
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
Instructions:
- Place leafy green lettuce, rocket, tomatoes, crisp apple slices, and thinly sliced red onion on four individual salad plates. Scatter crumbled blue cheese and chopped pecans on top.
- To make the dressing, mix vinegar, olive oil, honey, salt, and pepper in a jar with a lid. Shake vigorously to blend well. Drizzle the dressing over the prepared salads.
