Avocado tuna salad

Ingredients:

  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • 2 medium avocados, chopped (about 2 1/2 cups)
  • 2 (140g) cans solid white tuna in oil, drained and flaked
  • 4 cups romaine hearts
  • 1 cup chopped English cucumber
  • ⅓ cup crumbled feta cheese
  • ¼ cup toasted sliced almonds
  • ¼ cup chopped pitted Kalamata olives
  • 3 tablespoons chopped fresh flat-leaf parsley

Instructions:

  1. Combine oil, lemon juice, and salt in a big bowl and mix well; add avocados and stir gently until evenly coated. Then, mix in tuna, romaine lettuce, cucumber, feta cheese, almonds, olives, and parsley with the avocado mixture; gently combine all ingredients.
