Avocado-tomato salad

Ingredients:
- 1 medium shallot, thinly sliced crosswise and separated into rings
- 3 tablespoons fresh lime juice
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon thinly sliced fresh mint
- 1 tablespoon thinly sliced fresh basil
- ½ teaspoon salt
- 1 English cucumber, thinly sliced
- 1 ripe avocado, halved, pitted and sliced crosswise
Instructions:
- Mix shallot rings with lime juice in a spacious bowl; allow it to sit until it becomes soft, approximately 10 minutes. Beat in oil, mint, basil, and salt. Include cucumber; stir gently to cover. Allow the cucumber to soak in the mixture, stirring from time to time, until soft, about 10 minutes.
- With a slotted spoon, move the cucumber to a serving plate; add avocado on top. Pour the dressing on the salad. Serve promptly.
