Avocado, shrimp, spinach, and mango salad

Ingredients:
- 1/2 avocado, pitted, halved
- 1/4 cup salsa verde, homemade or store-bought
- 2 tablespoon water
- 2 fresh lime juice
- 1 tablespoon honey
- 1/4 teaspoon ground cayenne pepper
- 1 cup diced cucumber
- 1 cup chopped mango
- 1 medium sweet pepper, seeded and diced
- 1/2 cup cilantro leaves, chopped
- 1 bag (10-ounces) baby spinach leaves
Instructions:
- Add half of an avocado, water, green salsa, lime juice, and honey into a blender.
- Blend on high speed until the mixture is smooth.
- In a big bowl, mix together the shrimp, cucumber, mango, red bell pepper, and cilantro.
- Place spinach and the rest of the avocado on six plates, spoon shrimp mixture on top, and then drizzle with the prepared dressing.
