Avocado, shrimp, spinach, and mango salad

Enjoy a flavorful combination of succulent shrimp, creamy avocado, fresh spinach, and sweet mango in this delightful salad bursting with vibrant colors and exciting flavors.

Ingredients:

  • 1/2 avocado, pitted, halved
  • 1/4 cup salsa verde, homemade or store-bought
  • 2 tablespoon water
  • 2 fresh lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon ground cayenne pepper
  • 1 cup diced cucumber
  • 1 cup chopped mango
  • 1 medium sweet pepper, seeded and diced
  • 1/2 cup cilantro leaves, chopped
  • 1 bag (10-ounces) baby spinach leaves

Instructions:

  1. Add half of an avocado, water, green salsa, lime juice, and honey into a blender.
  2. Blend on high speed until the mixture is smooth.
  3. In a big bowl, mix together the shrimp, cucumber, mango, red bell pepper, and cilantro.
  4. Place spinach and the rest of the avocado on six plates, spoon shrimp mixture on top, and then drizzle with the prepared dressing.
