Avocado salad

Ingredients:
- 2 semi-ripe avocados
- 2 tablespoons torn fresh flat-leaf parsley leaves
- 1 mini cucumber, sliced
- 1/2 small red onion, thinly sliced
- Kosher salt and freshly ground black pepper
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 1/4 teaspoon ground cumin
- 1 lime, juiced (about 2 tablespoons)
Instructions:
- Prepare the salad by peeling the avocados, cutting them into 1-inch chunks. Place all except 2 chunks in a large mixing bowl for the salad. Reserve the remaining 2 chunks in a small mixing bowl for the dressing.
- Combine the parsley, cucumber, and onion with the avocado chunks in the large mixing bowl. Season generously with salt and pepper.
- To make the dressing: Use a fork to mash the 2 reserved avocado chunks until creamy. Mix in the oil, honey, cumin, and lime juice until well combined.
- Drizzle the dressing over the avocado salad and gently mix with your hands. Serve immediately.
