Avocado salad

Ingredients:

  • 2 semi-ripe avocados
  • 2 tablespoons torn fresh flat-leaf parsley leaves
  • 1 mini cucumber, sliced 
  • 1/2 small red onion, thinly sliced 
  • Kosher salt and freshly ground black pepper 
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey 
  • 1/4 teaspoon ground cumin 
  • 1 lime, juiced (about 2 tablespoons) 

Instructions:

  1. Prepare the salad by peeling the avocados, cutting them into 1-inch chunks. Place all except 2 chunks in a large mixing bowl for the salad. Reserve the remaining 2 chunks in a small mixing bowl for the dressing.
  2. Combine the parsley, cucumber, and onion with the avocado chunks in the large mixing bowl. Season generously with salt and pepper.
  3. To make the dressing: Use a fork to mash the 2 reserved avocado chunks until creamy. Mix in the oil, honey, cumin, and lime juice until well combined.
  4. Drizzle the dressing over the avocado salad and gently mix with your hands. Serve immediately.
