Avocado kale salad with lemon coconut oil dressing

Ingredients:
- 1 bunch fresh kale, rinsed and dried
- 1 ripe avocado
- 1 organic lemon, juiced
- 3 teaspoons organic coconut oil
- 1 small clove of garlic, minced or pressed
- 1 teaspoon maple syrup
- 1 pinch sea salt
- few grinds of black pepper
- handful unsweetened, shredded coconut
- handful toasted pepitas, sesame seeds or sunflower seeds
Instructions:
- Detach the ribs from the kale and finely chop it. Transfer it to a large serving bowl and massage the lemon juice, sea salt, and coconut oil into the kale leaves thoroughly. Allow it to marinate for a minimum of 10 minutes.Peel and remove the pit from the avocado, then dice it. Combine half of the avocado dices with the minced garlic, black pepper, and maple syrup, and fold it into the chopped kale.Finish by adding the remaining avocado dices, shredded coconut, and toasted seeds as toppings before serving.
