Avocado caprese salad

Ingredients:

  • 2 medium red, ripe tomatoes, cut into eight slices
  • 1 bunch fresh basil, leaves removed, washed and patted dry with a paper towel
  • 230g fresh mozzarella, cut into eight slices
  • 1 ripe avocado from Mexico, pitted, peeled and sliced
  • 2 teaspoons extra virgin olive oil
  • 1/8 teaspoon freshly cracked black pepper (optional)
  • 1/8 teaspoon teaspoon sea salt (optional)

Instructions:

  1. Start by arranging tomato slices, big basil leaves, mozzarella slices, and avocado slices on a big serving platter, creating layers and spreading them out slightly on the platter until all the mozzarella, tomato, and avocado are used.
  2. Add a generous drizzle of high-quality olive oil and a sprinkle of freshly ground black pepper and sea salt.
  3. Complete the salad by decorating with a few small basil leaves before serving.
