Avocado and pink grapefruit salad with coriander
Delight in the refreshing combination of creamy avocado, zesty pink grapefruit, and aromatic coriander in this vibrant and flavorful salad.
Ingredients:
- pink grapefruits
- tablespoons olive oil
- tablespoon minced shallot
- teaspoon soy sauce
- /2 teaspoon honey
- /4 teaspoon Asian sesame oil
- teaspoon grated peeled fresh ginger
- teaspoon coriander seeds, cracked

- small avocado, halved, pitted, peeled
Instructions:
- Start by peeling and removing the white pith from 1 grapefruit using a small sharp knife. Slice the grapefruit into 4 pieces. Take another grapefruit, cut it in half, and extract 3 tablespoons of juice. Combine the juice with olive oil and the following 6 ingredients in a separate small bowl. Add salt and pepper to the dressing according to your taste. In a medium bowl, mix the greens with 2 tablespoons of dressing and distribute them evenly onto 2 plates. Place the grapefruit slices and avocado next to the greens and drizzle the remaining dressing over the top.
