Avocado and pink grapefruit salad with coriander

Delight in the refreshing combination of creamy avocado, zesty pink grapefruit, and aromatic coriander in this vibrant and flavorful salad.

Ingredients:

  • pink grapefruits
  • tablespoons olive oil
  • tablespoon minced shallot
  • teaspoon soy sauce
  • /2 teaspoon honey
  • /4 teaspoon Asian sesame oil
  • teaspoon grated peeled fresh ginger
  • teaspoon coriander seeds, cracked
  • cups
  • small avocado, halved, pitted, peeled

Instructions:

  1. Start by peeling and removing the white pith from 1 grapefruit using a small sharp knife. Slice the grapefruit into 4 pieces. Take another grapefruit, cut it in half, and extract 3 tablespoons of juice. Combine the juice with olive oil and the following 6 ingredients in a separate small bowl. Add salt and pepper to the dressing according to your taste. In a medium bowl, mix the greens with 2 tablespoons of dressing and distribute them evenly onto 2 plates. Place the grapefruit slices and avocado next to the greens and drizzle the remaining dressing over the top.
