Ingredients:
- 1 Florida avocado, peeled and cut into large dice
- 1 ripe papaya, peeled and cut into large dice
- 1/2 Vidalia onion, thinly sliced
- 1 bunch baby arugula
- 2 tablespoons tarragon leaves
- Orange and Vanilla Vinaigrette, recipe follows
- 1 cup orange juice
- 1 vanilla bean, split
- 1 garlic clove, pureed with knife
- 1/4 cup rice wine vinegar
- 1/2 cup extra virgin olive oil
- Kosher salt, to taste
- Fresh ground black pepper
Instructions:
- Arrange the salad by alternating layers of arugula and tarragon, followed by avocado, papaya, and onions. Finish by pouring vinaigrette on top.
- In a pot, combine orange juice with a split vanilla bean, scraping the seeds into the juice. Keep the vanilla bean in the pot, bring the mixture to a simmer, and let it reduce by two-thirds. While this is simmering, crush a garlic clove with a pinch of salt using the flat side of a knife. Once the orange juice has reduced and cooled, discard the vanilla bean, then mix in the garlic paste, rice wine vinegar, and olive oil. Stir the mixture thoroughly and season with salt and pepper.
