Avocado and grapefruit salad

Ingredients:
- 1 tablespoon Dijon mustard
- 1/4 cup freshly squeezed lemon juice
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon freshly ground black pepper
- 1/2 cup good olive oil
- 4 ripe Hass avocados
- 2 large red grapefruits
Instructions:
- Combine mustard, lemon juice, salt, and pepper in a small bowl. Gradually add the olive oil while whisking until the vinaigrette becomes well blended.
- Prior to serving, halve the avocados, take out the seeds, and gently remove the skin. Slice each half into 4 thick pieces. Coat the avocado slices with the vinaigrette to avoid discoloration. Use a big, sharp knife to remove the peel from the grapefruits (ensuring all the white pith is removed), then separate the grapefruit segments by cutting between the membranes.
