Avocado and grapefruit salad

Ingredients:

  • 1 tablespoon Dijon mustard
  • 1/4 cup freshly squeezed lemon juice
  • 1 1/2 teaspoons kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1/2 cup good olive oil
  • 4 ripe Hass avocados
  • 2 large red grapefruits

Instructions:

  1. Combine mustard, lemon juice, salt, and pepper in a small bowl. Gradually add the olive oil while whisking until the vinaigrette becomes well blended.
  2. Prior to serving, halve the avocados, take out the seeds, and gently remove the skin. Slice each half into 4 thick pieces. Coat the avocado slices with the vinaigrette to avoid discoloration. Use a big, sharp knife to remove the peel from the grapefruits (ensuring all the white pith is removed), then separate the grapefruit segments by cutting between the membranes.
  3. Place the avocado slices along the perimeter of a large serving platter. Place the grapefruit segments in the middle. Drizzle the vinaigrette on top, season with salt and pepper, and present.
