Asparagus & radish salad with spring herb dressing

Delight in the fresh medley of asparagus & radish adorned with a vibrant spring herb dressing. Experience a burst of flavors in every bite!

Ingredients:

  • 1360g asparagus, blanched, trimmed and cut into 1 inch pieces
  • 1 bunch radishes, thinly sliced
  • 1 cup sour cream
  • 1/2 cup fresh buttermilk
  • 2 tablespoons mayoniasse
  • 2 tablespoons extra virgin olive oil
  • 1 lemon, zested and juiced
  • 1 splash white wine vinegar
  • 1/2 cup fresh dill, chopped
  • 4 scallions, white and green part, chopped
  • 1/4 cup Italian parsley, chopped
  • salt to taste
  • 1 pinch fresh black pepper

Instructions:

  1. Put all the dressing components into a blender and blend until thoroughly mixed.
  2. Mix together asparagus and radishes with sufficient dressing to cover them, approximately 1 cup, and add salt and pepper to taste.
  3. Ensure the salad remains cold until it is time to be served.
  4. Any additional dressing can be stored in the fridge in a sealed container for up to a week. It also works well as a dip for fresh vegetables.
