Asparagus & radish salad with spring herb dressing
Delight in the fresh medley of asparagus & radish adorned with a vibrant spring herb dressing. Experience a burst of flavors in every bite!
Ingredients:
- 1360g asparagus, blanched, trimmed and cut into 1 inch pieces
- 1 bunch radishes, thinly sliced
- 1 cup sour cream
- 1/2 cup fresh buttermilk
- 2 tablespoons mayoniasse
- 2 tablespoons extra virgin olive oil
- 1 lemon, zested and juiced
- 1 splash white wine vinegar
- 1/2 cup fresh dill, chopped
- 4 scallions, white and green part, chopped
- 1/4 cup Italian parsley, chopped
- salt to taste
- 1 pinch fresh black pepper
Instructions:
- Put all the dressing components into a blender and blend until thoroughly mixed.
- Mix together asparagus and radishes with sufficient dressing to cover them, approximately 1 cup, and add salt and pepper to taste.
- Ensure the salad remains cold until it is time to be served.
- Any additional dressing can be stored in the fridge in a sealed container for up to a week. It also works well as a dip for fresh vegetables.
