Asparagus & radish salad

Ingredients:
- 1 English cucumber, very thinly sliced
- 3 stalks celery, very thinly sliced, plus celery leaves for garnish
- 4 medium radishes, very thinly sliced
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon grated lemon zest
- 2 tablespoons lemon juice
- ¼ cup freshly grated Parmesan cheese
- ½ teaspoon flaky sea salt, such as Maldon
- ¼ teaspoon ground pepper
Instructions:
- Mix together cucumber, celery, and radishes in a big bowl. Blend together oil and lemon juice in a small bowl or shake them up in a half-pint mason jar.
- Right before you serve it, pour the dressing on top of the salad. Present it with a sprinkle of lemon zest, cheese, salt, and pepper. Add celery leaves on top for decoration, if preferred.
