Asparagus & radish salad

Ingredients:

  • 1 English cucumber, very thinly sliced
  • 3 stalks celery, very thinly sliced, plus celery leaves for garnish
  • 4 medium radishes, very thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • ¼ cup freshly grated Parmesan cheese
  • ½ teaspoon flaky sea salt, such as Maldon
  • ¼ teaspoon ground pepper

Instructions:

  1. Mix together cucumber, celery, and radishes in a big bowl. Blend together oil and lemon juice in a small bowl or shake them up in a half-pint mason jar.
  2. Right before you serve it, pour the dressing on top of the salad. Present it with a sprinkle of lemon zest, cheese, salt, and pepper. Add celery leaves on top for decoration, if preferred.
