Asian rice noodle salad with steak

Ingredients:
- 2 cloves garlic, minced
- 1 small nub of fresh ginger, grated
- 2 tablespoons low-sodium soy sauce, divided
- 4 teaspoon toasted sesame oil
- 1 teaspoon brown sugar
- 1 (8-ounce) steak of your choice (skirt, flank, sirloin)
- 1 tablespoon rice vinegar
- 1 lime, juiced (1 tablespoon)
- 1 teaspoon sugar
- 1 tablespoon sesame seeds
- 1 cup shredded carrots
- 1 large cucumber, finely chopped
- 1 (8-ounce) package rice noodles
- 1/4 chopped peanuts
Instructions:
- Place most of the minced garlic (set aside the rest for the dressing), grated ginger, only 1 tablespoon of soy sauce (keep the rest for the dressing), sesame oil, and brown sugar into a sealable bag. Mix the ingredients thoroughly. Add the steak, eliminate excess air, and close the bag tightly. Allow it to marinate for at least overnight.
- Prepare the dressing by combining the remaining soy sauce, leftover garlic, rice vinegar, lime juice, sugar, and sesame seeds. Include 2 tablespoons of water and mix thoroughly.
- Follow the package instructions to cook the noodles. Drain and taste to check if they are cooked properly.
- Grill or broil the steak for about 4 minutes on each side, or until it reaches your desired level of doneness. Let the steak sit for 5 minutes, then cut into thin slices.
- In each bowl, mix the noodles, carrots, cucumbers, and steak slices with the prepared dressing. Garnish with chopped peanuts.
