Asian pear, mango and red pepper salad

Ingredients:

  • 1 Asian pear
  • 1 Ripe mango
  • 1/2 Red pepper
  • 1/2 cup Good olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon country mustard (or your own concoction)
  • 1 tablespoon Grade B maple syrup
  • Salt and Pepper to taste

Instructions:

  1. Prepare the dressing by combining olive oil, balsamic vinegar, maple syrup, country mustard, and salt and pepper. Mix thoroughly to combine the ingredients.
  2. Cut the fruits into small pieces and transfer them to a bowl.
  3. Add a tablespoon of the dressing to the fruits and mix gently. Adjust the amount of dressing according to your preference. Keep the remaining dressing for a future green or Waldorf Salad.
  4. Chill the fruit salad before serving.
