Asian inspired beef salad
Experience the bold flavors of Asia with this tantalizing beef salad recipe. Juicy beef strips paired with crunchy vegetables and vibrant dressing.
Ingredients:
- Dressing
- 3 tablespoons fresh lime juice
- 3 tablespoons fish sauce
- 3 tablespoons unrefined sugar
- 2 teaspoons soy sauce
- 2 teaspoons lemongrass, microplaned
- 1 tablespoon lime zest
- 2 teaspoons serrano chili, thinly sliced
- 2 tablespoons canola oil
- Salad
- 450g beef sirloin, grass fed preferred
- 1 tablespoon sesame oil
- kosher salt
- fresh cracked black pepper
- 2 cups red leafed baby romaine
- 1 small red onion, thinly sliced
- 1/3 cup basil, roughly chopped
- 1/3 cup cilantro, roughly chopped
- 1/3 cup mint, roughly chopped
- 1/2 red pepper, thinly sliced
- 2 vine ripe tomatoes, cut in quarters
Instructions:
- Dressing
- Mix all the ingredients in a small jar and shake well. Let it sit for at least 30 minutes.
- Salad
- Coat the beef with sesame oil and season it with salt and pepper.
- In a salad bowl, mix together the lettuce, herbs, red onion, and red pepper. Toss them together.
- Heat a grill pan on the stove and cook the beef until it reaches your desired level of doneness. For medium rare, this should take about 2 - 3 minutes per side depending on the thickness of the meat. Cut the meat into thin strips.
- Mix the greens with a third of the prepared dressing.
- Place the salad greens on serving plates. Arrange the sliced beef and tomatoes on top. Drizzle the remaining dressing over each salad.
