Asian cucumber salad

Ingredients:

  • 3 tablespoons rice wine vinegar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon kosher salt
  • 450g sliced persian cucumbers
  • 2 sliced scallions
  • 1/4 cup cilantro
  • 2 tablespoons sliced pickled ginger
  • 1/2 finely chopped red jalapeno
  • 1 tablespoon sesame seends

Instructions:

  1. Combine 3 tablespoons of rice wine vinegar, 1 tablespoon of sesame oil, 1/2 teaspoon of sugar, and 1/4 teaspoon of kosher salt in a medium bowl. Mix in 1 pound of sliced Persian cucumbers, 2 sliced scallions, 1/4 cup of cilantro, 2 tablespoons of sliced pickled ginger, 1/2 red jalapeno finely chopped, and 1 tablespoon of sesame seeds.
