Ingredients:
- ¾ cup seasoned rice vinegar
- ¼ cup water
- 1 tablespoon sugar
- 1 tablespoon minced garlic
- 1 tablespoon lite soy sauce
- 1 teaspoon sesame oil
- ½ teaspoon freshly ground pepper
- 2 large cucumbers, peeled and sliced
- 2 tablespoons sesame seeds, toasted
Instructions:
- Mix the first 7 ingredients in a big bowl. Add cucumbers, mix well. Cover and refrigerate for 1 hour. Sprinkle sesame seeds, mix gently; serve right away.
