Asian chicken salad

Ingredients:

  • 2 large skinless, boneless chicken breasts (about 340g each), halved lengthwise
  • 4 slices peeled fresh ginger
  • 3 tablespoons fresh lime juice
  • 3 tablespoons peanut oil
  • 2 tablespoons packed light brown sugar
  • 2 tablespoons fish sauce
  • 1/2 teaspoon Sriracha
  • 1/2 head napa cabbage, thinly sliced
  • 2 carrots, grated
  • 110g snow peas, trimmed and thinly sliced on the diagonal
  • 1/2 cup fresh mint leaves, torn
  • 1/3 cup chopped salted peanuts

Instructions:

  1. Place the chicken and ginger in a medium saucepan and add enough water to cover them by 1 inch. Heat over medium-high flame until boiling, then lower the heat to medium and gently simmer until the chicken is fully cooked, approximately 10 minutes. Once done, drain the water and move the chicken to a cutting board.
  2. While waiting, prepare the dressing: Mix the lime juice, peanut oil, brown sugar, fish sauce, and Sriracha in a small bowl; then set it aside.
  3. In a large bowl, mix together the cabbage, carrots, snow peas, and mint. Pour in all of the dressing except for 2 tablespoons and toss the salad to ensure the vegetables are coated.
  4. Slice the chicken thinly. Serve each portion of salad with sliced chicken and peanuts on top; finish by drizzling the remaining dressing over the salad.
