Asian chicken salad

Delight your taste buds with this flavorful Asian-inspired chicken salad. Packed with vibrant flavors and fresh ingredients, it's a culinary delight.

Ingredients:

  • 1/3 head of green cabbage, sliced very thin
  • 60g Spring Green Salad mix
  • Handful of Chinese noodles to sprinkle on top
  • 6-230g boneless, skinless chicken breast chopped into bite sized pieces
  • 1/4 cup hoisin sauce
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons toasted sesame oil
  • 1 inch piece of ginger root peeled and grated
  • 4 green onions
  • 1/4 cup dry roasted peanuts
  • 310g can of mandarin oranges
  • 1 bunch of fresh basil
  • 1/2 bunch of fresh cilantro
  • 1 bunch of fresh mint

Instructions:

  1. Combine hoisin sauce, vinegar, soy sauce, oyster sauce, sesame oil, ginger, and green onions in a bowl. Let it sit for a while to allow the flavors to meld together.
  2. Cook the chicken until it's done and then set it aside (approximately 8-10 minutes).
  3. Slice the cabbage thinly using a mandolin or a knife. In a big salad bowl, combine the cabbage, Spring green mix, peanuts, mandarin oranges, basil, cilantro, and mint.
  4. Pour the prepared dressing over the salad and mix well to ensure all ingredients are coated before adding the Chinese noodles.
