Asian asparagus salad with peanuts and mint dressing [vegan]

Delight in the vibrant flavors of an Asian asparagus salad with a zesty mint dressing, topped with crunchy peanuts. A perfect vegan dish bursting with fresh taste!

Ingredients:

  • 230g asparagus
  • 100g soba noodles
  • 4 tablespoons olive oil or sunflower oil
  • 4 tablespoons lemon juice
  • 2 tablespoons light soy sauce
  • 1 garlic clove (crushed)
  • 1 teaspoon sesame oil
  • 2 teaspoons brown sugar
  • 2 tablespoons fresh mint leaves (finely chopped)
  • 50g roasted peanuts chopped coarsely
  • salt & pepper

Instructions:

  1. Boil salted water in 2 pans.
  2. Prepare the dressing by combining oils, lemon juice, soy sauce, garlic, sugar, and mint in a bowl.
  3. Finely chop peanuts and set aside.
  4. Once the water is boiling, cook the asparagus for 3 minutes in one pan and cook soba noodles (for 3-4 minutes) in the other pan.
  5. Remove the asparagus from the pan when done. Drain the soba noodles separately and rinse them under cold water to prevent them from sticking together.
  6. Divide the soba noodles and asparagus evenly between two plates.
  7. Pour the dressing over the noodles and asparagus, then sprinkle generously with chopped peanuts.
