Arugula, peach & goat cheese salad with cherry dressing
Indulge in the delightful combination of peppery arugula, juicy peach slices, tangy goat cheese, and sweet cherry dressing in this fresh summer salad.
Ingredients:
- 1/2 cup fresh or frozen cherries
- 2 tablespoons water
- 2 tablespoons mild flavored olive oil
- 1 tablespoon lemon juice
- salt and pepper to taste
- 6 cups arugula leaves
- 2 peaches, pitted and sliced finely
- 4 shots fine slices of red onion
- 110g goat cheese, crumbled
- 1 handful fresh basil leaves, finely sliced
Instructions:
- To make the dressing:
- Blend the cherries with water until smooth in a blender. Strain the mixture through a fine sieve to separate the cherry juice from the pulp. Collect the cherry juice in a separate bowl.
- Combine olive oil, lemon juice, salt, and pepper; mix well until the dressing is fully blended.
- For the salad:
- Arrange the arugula evenly on four plates. Add thinly sliced red onion and peach slices on top of the arugula.
- Sprinkle crumbled goats cheese over the salads and generously pour the cherry dressing on top.
- Decorate with sliced basil leaves before serving.
