Arugula, beet & feta salad
Delight in the fresh flavors of arugula, sweet beets, and tangy feta in this vibrant salad bursting with a balance of earthy, peppery, and savory notes.
Ingredients:
- 1 medium shallot, thinly sliced
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons champagne vinegar
- 2 teaspoons honey
- ¼ teaspoon ground pepper, plus more for garnish
- ⅛ teaspoon salt
- 1 (8.8-ounce) package refrigerated cooked beets, such as Love Beets
- 1 (140g) package arugula
- ½ cup crumbled feta cheese
Instructions:
- Combine shallot, oil, vinegar, honey, pepper, and salt in a big bowl by stirring them together.
- Cut the beets into 1-inch wedges after draining them; put them in the mixture and mix well. Put arugula and mix gently. Sprinkle feta on top and decorate with more pepper, if preferred.
