Arugula, beet & feta salad

Delight in the fresh flavors of arugula, sweet beets, and tangy feta in this vibrant salad bursting with a balance of earthy, peppery, and savory notes.

Ingredients:

  • 1 medium shallot, thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons champagne vinegar
  • 2 teaspoons honey
  • ¼ teaspoon ground pepper, plus more for garnish
  • ⅛ teaspoon salt
  • 1 (8.8-ounce) package refrigerated cooked beets, such as Love Beets
  • 1 (140g) package arugula
  • ½ cup crumbled feta cheese

Instructions:

  1. Combine shallot, oil, vinegar, honey, pepper, and salt in a big bowl by stirring them together.
  2. Cut the beets into 1-inch wedges after draining them; put them in the mixture and mix well. Put arugula and mix gently. Sprinkle feta on top and decorate with more pepper, if preferred.
