Arugula and peach salad with creamy chive vinaigrette

Ingredients:
- large ripe peaches
- tablespoons fresh lemon juice, divided
- tablespoons extra-virgin olive oil
- 1/2 tablespoons whipping cream
- /3 cup finely chopped fresh chives
- cups (loosely packed) arugula (about 170g)
Instructions:
- Clean peaches by scrubbing off the fuzz. Halve them and take out the pits. Slice peaches thinly and put them in a spacious bowl. Pour in 1/2 tablespoon of lemon juice and mix well. In another small bowl, blend 1 1/2 tablespoons of lemon juice with olive oil. Incorporate cream and chives into the mixture. Season with salt and pepper.
