Arugula-and-frisée salad with peas, pistachios and pecorino
Delight in the vibrant flavors of arugula and frisée tossed with sweet peas, crunchy pistachios, and tangy pecorino in this refreshing salad.
Ingredients:
- 2 tablespoons freshly squeezed lemon juice
- 1/3 cup extra-virgin olive oil
- Salt and freshly ground pepper
- 140g baby arugula
- 1 large head frisée, chopped
- 1 tablespoon chopped mint
- 1 tablespoon chopped flat-leaf parsley
- 1 cup frozen baby peas, thawed
- 1/2 cup salted roasted pistachios, chopped
- 1 cup shaved Pecorino Romano cheese (90g)
Instructions:
- Mix the lemon juice with the olive oil in a small bowl and add salt and pepper to season the dressing.
- Combine arugula, frisée, mint, parsley, and peas in a big bowl. Pour the dressing over the salad and mix thoroughly. Sprinkle pistachios and Pecorino cheese, mix again, and it's ready to be served.
