Arugula-and-frisée salad with peas, pistachios and pecorino

Delight in the vibrant flavors of arugula and frisée tossed with sweet peas, crunchy pistachios, and tangy pecorino in this refreshing salad.

Ingredients:

  • 2 tablespoons freshly squeezed lemon juice
  • 1/3 cup extra-virgin olive oil
  • Salt and freshly ground pepper
  • 140g baby arugula
  • 1 large head frisée, chopped
  • 1 tablespoon chopped mint
  • 1 tablespoon chopped flat-leaf parsley
  • 1 cup frozen baby peas, thawed
  • 1/2 cup salted roasted pistachios, chopped
  • 1 cup shaved Pecorino Romano cheese (90g)

Instructions:

  1. Mix the lemon juice with the olive oil in a small bowl and add salt and pepper to season the dressing.
  2. Combine arugula, frisée, mint, parsley, and peas in a big bowl. Pour the dressing over the salad and mix thoroughly. Sprinkle pistachios and Pecorino cheese, mix again, and it's ready to be served.
