Arugula and candied walnut salad

Indulge in the vibrant flavors of arugula paired with the sweetness of candied walnuts in this delightful salad. Perfect balance of peppery and nutty notes.

Ingredients:

  • 4 handfuls Arugula
  • 2 tablespoons Grated Parmesan
  • 50 grams Walnuts
  • 1 tablespoon Brown Sugar
  • 1 pinch Cinnamon
  • 4 tablespoons Canola oil
  • 1 tablespoon Balsamic Vinegar
  • 1 tablespoon Wholegrain Mustard

Instructions:

  1. Start by preparing your salad dressing. Combine balsamic vinegar and mustard in a mixing bowl and whisk until well combined. Slowly drizzle in canola oil while whisking continuously for about 10-20 seconds until the mixture emulsifies. Continue adding oil gradually while whisking to prevent separation of the vinaigrette.
  2. Moving on to the candied walnuts. Heat sugar in a small saucepan over medium heat until it starts melting. Once melted, add walnuts and stir quickly to coat them evenly. This process usually takes 2-3 minutes and the mixture will become sticky. Spread the coated walnuts on a sheet of baking parchment to cool for approximately 5 minutes before breaking apart any clumps.
  3. Now it's time to put everything together! Toss Arugula with the prepared dressing in a large mixing bowl. Divide the dressed Arugula between two serving plates and sprinkle 1 tablespoon of grated Parmesan over each portion. Finish by scattering the candied walnuts on top. Season with salt and pepper to taste before serving.
