Apple salad with walnuts and lime

Ingredients:

  • cup walnut halves
  • crisp apples (such as Pink Lady or Honeycrisp), thinly sliced
  • scallions, thinly sliced
  • cup fresh flat-leaf parsley leaves
  • cup fresh lime juice
  • tsp. crushed red pepper flakes
  • Kosher salt and freshly ground black pepper
  • cup grated provolone cheese or white cheddar
  • Tbsp. extra-virgin olive oil
  • cup very coarse, fresh breadcrumbs

Instructions:

  1. Heat the oven to 350°. Place breadcrumbs on a small rimmed baking sheet in an even layer; bake, stirring every now and then, until they turn golden brown, for about 6 to 8 minutes. Allow them to cool.
  2. While the breadcrumbs are toasting, place walnuts on a small rimmed baking sheet; toast them, stirring occasionally, until they become golden brown, typically for 8 to 10 minutes. Let them cool down before chopping them coarsely.
  3. Combine the toasted breadcrumbs, chopped walnuts, diced apples, sliced scallions, chopped parsley, lime juice, and red pepper flakes in a large bowl; season everything with salt and pepper. Finally, add the cheese and oil, and gently mix all the ingredients together.
