Apple salad with walnuts and lime

Ingredients:
- cup walnut halves
- crisp apples (such as Pink Lady or Honeycrisp), thinly sliced
- scallions, thinly sliced
- cup fresh flat-leaf parsley leaves
- cup fresh lime juice
- tsp. crushed red pepper flakes
- Kosher salt and freshly ground black pepper
- cup grated provolone cheese or white cheddar
- Tbsp. extra-virgin olive oil
- cup very coarse, fresh breadcrumbs
Instructions:
- Heat the oven to 350°. Place breadcrumbs on a small rimmed baking sheet in an even layer; bake, stirring every now and then, until they turn golden brown, for about 6 to 8 minutes. Allow them to cool.
- While the breadcrumbs are toasting, place walnuts on a small rimmed baking sheet; toast them, stirring occasionally, until they become golden brown, typically for 8 to 10 minutes. Let them cool down before chopping them coarsely.
- Combine the toasted breadcrumbs, chopped walnuts, diced apples, sliced scallions, chopped parsley, lime juice, and red pepper flakes in a large bowl; season everything with salt and pepper. Finally, add the cheese and oil, and gently mix all the ingredients together.
