Apple salad with toasted mustard seeds and herbs

Ingredients:
- cup yellow and/or brown mustard seeds
- tablespoons honey
- cup plus 2 tablespoons apple cider vinegar
- tablespoon kosher salt, plus more
- large apples (such as Pink Lady or Gala), cored, very thinly sliced
- cup parsley leaves with tender stems
- tablespoons chopped fresh chives
- tablespoons olive oil
- Freshly ground black pepper
Instructions:
- Heat mustard seeds in a small saucepan over medium heat until they start popping, which should take around 2 minutes. Mix in honey, ¾ cup of vinegar, and 1 tablespoon of salt. Allow it to gently simmer, stirring occasionally, until the liquid is almost gone, which should take about 5 minutes. Leave it to cool.
- Combine apples in a small bowl with parsley, chives, oil, 2 tablespoons of seasoned mustard seeds, and the remaining 2 tablespoons of vinegar; add salt and pepper for taste. Present the apple salad with extra mustard seeds on the side.
