Apple salad with toasted mustard seeds and herbs

Delight in the vibrant flavors of apple salad drizzled with toasted mustard seeds and aromatic herbs. A refreshing dish bursting with taste sensations.

Ingredients:

  • cup yellow and/or brown mustard seeds
  • tablespoons honey
  • cup plus 2 tablespoons apple cider vinegar
  • tablespoon kosher salt, plus more
  • large apples (such as Pink Lady or Gala), cored, very thinly sliced
  • cup parsley leaves with tender stems
  • tablespoons chopped fresh chives
  • tablespoons olive oil
  • Freshly ground black pepper

Instructions:

  1. Heat mustard seeds in a small saucepan over medium heat until they start popping, which should take around 2 minutes. Mix in honey, ¾ cup of vinegar, and 1 tablespoon of salt. Allow it to gently simmer, stirring occasionally, until the liquid is almost gone, which should take about 5 minutes. Leave it to cool.
  2. Combine apples in a small bowl with parsley, chives, oil, 2 tablespoons of seasoned mustard seeds, and the remaining 2 tablespoons of vinegar; add salt and pepper for taste. Present the apple salad with extra mustard seeds on the side.
