Apple salad with cabrales cheese and toasted almonds

Ingredients:
- 1 cup blanched whole almonds
- 7 medium garlic cloves
- ¼ cup extra-virgin olive oil
- 2 tablespoons sherry vinegar
- 1 tablespoon chopped shallot
- Kosher salt and freshly ground pepper
- 3 large Granny Smith apples
- 2 tablespoons chopped chives
- 140g Cabrales cheese (crumbled)
Instructions:
- Preheat the oven to 350°. Place the almonds on a small baking sheet and bake for about 10 minutes, or until they are lightly toasted. Remove from the oven, transfer to a plate, and allow them to cool down. After cooling, roughly chop the almonds into smaller pieces.
- In a small saucepan, heat the olive oil with the garlic cloves over medium-high heat until the garlic turns golden brown, which should take around 5 minutes. Take the saucepan off the heat and let the mixture cool down.
- Transfer the cooled garlic and oil mixture to a blender. Add the vinegar and shallot, season with salt and pepper, and blend until you get a smooth consistency.
- Cut the apples in half, remove the core, and then slice them into thin 1/4-inch matchsticks. In a large bowl, mix the apple matchsticks with the toasted almonds, chives, and the prepared dressing. Sprinkle the Cabrales cheese on top before serving.
