Apple, pecan and blue cheese salad

Ingredients:

  • 340g salad greens (spring mix)
  • 1/2 cup dried cherries
  • 1/2 cup pecan halves
  • 170g blue cheese chunks
  • 2 whole apples, cored and sliced very thin
  • 1/4 cup olive oil
  • 1 tablespoon (heaping) Dijon
  • 1 tablespoon maple syrup
  • 1 teaspoon apple cider vinegar (or more to taste)
  • Salt and freshly ground black pepper

Instructions:

  1. Combine the leafy vegetables, cherries, pecans, cheese, and apples in a spacious salad bowl. 
  2. In a compact jar, blend the olive oil, Dijon mustard, maple syrup, and vinegar together. Season with salt and pepper. Cover the jar and shake vigorously to blend. 
  3. Drizzle a portion of the salad dressing onto the salad and mix well. Sample the salad and adjust the dressing according to your preference.
