Apple fennel salad

Ingredients:

  • 2 Pink Lady apples - sliced
  • 10 cups baby kale - loosely packed
  • 3 cups carrots - chopped
  • 1/2 cup olive oil
  • 1/2 teaspoon salt

Instructions:

  1. After preparing all the slices and cuts, mix everything together in a big mixing bowl. Pour the dressing on top and mix well to ensure everything is coated evenly.
  2. To make the dressing, mix lemon, salt, and onion together and let it sit for a minute. Then add the oil and stir until combined. I prefer preparing the dressing in a mason jar so it's convenient to cover with a lid and store any leftovers.
  3. To thinly slice the fennel, halve the fennel bulb lengthwise. Starting from the bulb's side, use a peeler to strip thin slices of fennel.
