Apple fennel salad

Ingredients:
- 2 Pink Lady apples - sliced
- 10 cups baby kale - loosely packed
- 3 cups carrots - chopped
- 1/2 cup olive oil
- 1/2 teaspoon salt
Instructions:
- After preparing all the slices and cuts, mix everything together in a big mixing bowl. Pour the dressing on top and mix well to ensure everything is coated evenly.
- To make the dressing, mix lemon, salt, and onion together and let it sit for a minute. Then add the oil and stir until combined. I prefer preparing the dressing in a mason jar so it's convenient to cover with a lid and store any leftovers.
- To thinly slice the fennel, halve the fennel bulb lengthwise. Starting from the bulb's side, use a peeler to strip thin slices of fennel.
