Apple & cheddar pita pockets

Delicious apple and cheddar pita pockets recipe bursting with sweet and tangy flavors. Quick, easy, and perfect for a light lunch or snack.

Ingredients:

  • 1 whole-wheat pita bread (6 1/2-inch)
  • 1 tablespoon brown mustard
  • 1 medium apple, sliced
  • ¼ cup shredded Cheddar cheese (1 oz.)
  • 1 cup mixed salad greens

Instructions:

  1. Divide the pita by cutting it in half and applying mustard to the inner sides equally on both halves. Fill the pita with apple and cheese, dividing evenly. Place them on a toaster-oven pan lined with foil. Toast them, flipping if needed, until the cheese begins to melt and the pitas are hot but not burnt, for about 4 to 5 minutes. Use a spatula to take them out of the toaster. Gently stuff the pita pockets with greens, dividing evenly.
