Apple, beet, and mint salad

Ingredients:

  • 1 red beet
  • 1 Gala Apple
  • 4 tablespoons roughly chopped mint
  • juice of 1 lime
  • zest of half a lime
  • 1 teaspoon grated ginger
  • 1 tablespoon olive oil
  • 1 pinch of salt

Instructions:

  1. Heat the oven to 200 °C. Enclose the beet in aluminum foil and bake for one hour or until it is soft. Take it out of the oven, allow it to cool, and peel off the skin. The skin should come off easily.
  2. Cut the apple and beet into small 1/2 inch cubes. Put them in a medium-sized bowl along with the mint leaves.
  3. Extract the juice from the grated ginger into a separate small bowl. Mix in the lime juice, lime zest, oil, and salt. Whisk the ingredients together and drizzle over the apple and beet mixture.
