Apple and prosciutto salad

Ingredients:

  • 2 Fuji apples
  • 1 1/2 cups arugula
  • 1 small carrot
  • 1 celery stalk, only the light green part
  • 1/2 cup small Cherry tomatoes, washed and dried
  • 4 thin slices Prosciutto
  • 4 bread sticks
  • 1 tablespoon poppy seeds
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons apple vinegar
  • salt and freshly ground black pepper

Instructions:

  1. Prepare the dressing by whisking together the vinegar and salt. Gradually whisk in the olive oil and set aside.Peel the carrot, slice it into 1 ½ inch pieces, and then cut into matchsticks using a mandolin with a julienne blade attachment.Clean the celery stalk, chop it into 1 ½ inch pieces, and slice them into thin matchsticks.Rinse 1 apple, and julienne it using a mandolin with a blade attachment to matchstick size.Combine the apple, carrot, and celery in a bowl. Add half of the prepared salad dressing and mix well to coat.Wash the second apple, quarter it, remove the core and slice thinly using a mandolin with a straight blade.Take one slice of Prosciutto and wrap it around each breadstick, starting from the top and leaving a portion of the breadstick uncovered for holding.Mix the arugula with the remaining dressing in the bowl.Arrange half of the arugula on a plate. Place half of the mixed diced apple and veggies in the center. Sprinkle with poppy seeds. Garnish with apple slices, tomatoes, and serve with 2 breadsticks per plate.
