Apple and celery salad with toasted seeds

Ingredients:
- 1/4 cup raw pepitas
- 1/2 teaspoon black mustard seeds
- 1/2 teaspoon fennel seeds
- 1 1/4 cups cubed apple (sweet, or a mix of tart and sweet)
- 2 stalks celery with leaves, cut into small cubes
- 3/4 cup halved red grapes
- 1 1/4 cups chopped arugula leaves
- 2 tablespoons chopped cilantro leaves
- 2 tablespoons walnut oil
- 1 1/2 teaspoons apple cider vinegar
- salt
Instructions:
- Heat pepitas in a small non-stick pan over medium heat. Stir the pan regularly while cooking to evenly roast the seeds and prevent them from getting charred. Continue heating until seeds develop golden-brown spots which will enhance their flavor and crispiness. Transfer seeds from pan and let them cool down slightly.
- Roast mustard seeds and fennel seeds in the identical pan, cooking until they release aromas and the fennel seeds acquire a golden color in under a minute. Remove from stove.
- Mix the three types of seeds, apple, celery, grapes, arugula, cilantro, walnut oil, and vinegar in a mixing bowl. Combine all ingredients thoroughly. Season with salt according to your preference and mix once more.
