Apple and cabbage salad with apple molasses dressing

Ingredients:

  • 510g shredded green cabbage
  • 2 pieces apples
  • 170g lump crab meat
  • 110g coarsely chopped toasted pecans
  • 110g golden raisins
  • 2 tablespoons apple cider molasses
  • 60g apple cider vinegar
  • 110g olive oil
  • 1 dash freshly ground black pepper
  • 1 dash salt

Instructions:

  1. Finely chop the cabbage into small pieces
  2. Soak the raisins in hot water to soften for 10 minutes
  3. Rinse the crab meat and combine with the cabbage
  4. Place the apple cider molasses in a small bowl
  5. Stir the apple cider vinegar into the molasses until it dissolves
  6. Blend the olive oil into the apple cider mixture
  7. Season with a pinch of salt and freshly ground black pepper
  8. Remove the water from the raisins and mix them with the cabbage and crab meat
  9. Cut the apples, leaving the peel on, into small pieces and add them to the cabbage mixture
  10. Drizzle the dressing over the salad and mix well
  11. Serve right away or store covered in the refrigerator until ready to serve.
