Apple and brussels sprout salad
Delight in the crispness of apple and the earthiness of Brussels sprouts in this refreshing salad. Perfect blend of sweet and savory flavors.
Ingredients:
- 2 tablespoons apple cider vinegar
- 1 tablespoon apple cider or apple juice
- 6 tablespoons olive oil
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- kosher salt
- fresh cracked black pepper
- 1 large Golden Delicious apple, quartered, peeled, cored
- 2 teaspoons fresh squeezed lemon juice
- 1 10-ounce tub Brussels sprouts
- 1/2 cup diced red onion
- 1/2 cup dried cranberries
- 1/2 cup chopped toasted pecans
- 1/2 cup chopped crisp bacon
Instructions:
- To prepare the dressing, combine the vinegar, apple cider or juice, olive oil, honey, mustard, salt, and pepper in a jam jar or Mason jar. Seal the lid securely and shake vigorously to mix well. Set aside.
- Prepare the Brussels sprouts by removing any damaged outer leaves, trimming the stems, and slicing them using a food processor fitted with a slicing disk. Transfer the sliced sprouts to a large bowl, gently separate them, and set aside.
- Alternatively, you can slice the Brussels sprouts using a mandoline or a knife.
- Using the food processor's shredding disk, grate the apple quarters and add them to the Brussels sprouts along with a sprinkle of lemon juice.
- Combine the onion, cranberries, and pecans with the Brussels sprouts and apples. Mix in half of the prepared dressing, ensuring everything is well coated. Taste and adjust the seasoning with salt, pepper, and additional dressing if needed. Sprinkle the chopped bacon over the salad before serving.
