Antipasti hand salad

Ingredients:
- oz. cherry or grape tomatoes
- Tbsp. red wine vinegar
- oz. unsliced spicy salami
- oz. Parmesan cheese
- cup Castelvetrano olives (about 8)
- small garlic clove
- Tbsp. extra-virgin olive oil
- tsp. chopped or dried oregano
- romaine heart (about 8 oz.)
Instructions:
- Slice 8 oz. cherry tomatoes into quarters and place them in a medium-sized bowl. Drizzle 1 tablespoon of vinegar over the tomatoes and allow them to marinate while you prepare the rest of the ingredients.
- Cut 2 oz. salami into small pieces that are about 1/4 inch thick.
- Use the larger holes of a box grater to grate 2 oz. cheese.
- Remove pits from 1/4 cup of olives, then cut them into quarters.
- Combine the salami, Parmesan cheese, and olives with the marinated tomatoes in the bowl.
- Grate 1 garlic clove using a microplane into the same bowl as the other ingredients.
- Drizzle 1 tablespoon of oil and sprinkle 1 teaspoon of oregano over the salad and toss everything together.
- Trim the bottom of 1 romaine heart and separate into individual leaves.
- Present the romaine leaves on a plate next to the salad, using them as edible serving vessels.
- Preparation Tip: The tomato salad can be prepared a day in advance. Cover it and refrigerate until ready to serve.
