Annabel langbein’s beet, fennel and goat cheese salad

Ingredients:

  • 2 medium beets, peeled
  • 1 fennel bulb, trimmed
  • 1/4 cup walnuts
  • 3-1/60g goat cheese
  • 2 tablespoons boutique extra virgin olive oil
  • 6 tablespoons balsamic glaze

Instructions:

  1. Thinly slice beets and fennel using a mandolin or vegetable peeler.
  2. Arrange evenly on 6 plates.
  3. Top each plate with some walnuts and crumbled goat cheese, then drizzle olive oil and balsamic glaze around the edges of each plate.
  4. Add salt and black pepper to taste and serve promptly.
