American-style potato salad
Experience the ultimate blend of creamy mayonnaise, tangy mustard, and crispy bacon tossed with tender potatoes in this classic American-style potato salad.
Ingredients:
- 1/2 medium red onion, finely chopped
- 910g (10 to 12) small waxy-style potatoes, peeled and quartered
- 2 tablespoons, plus 1 teaspoon kosher salt
- 2 stalks celery (with leaves), chopped
- 1/2 cup prepared mayonnaise
- 2 tablespoons chopped flat-leaf parsley
- 2 tablespoons pickle relish
- 1 tablespoon French's mustard
- 2 hard-boiled eggs, roughly chopped
- Freshly ground black pepper
Instructions:
- Submerge the onions in cold water in a small bowl and let sit for 15 minutes. Afterward, discard the water.
- Place the potatoes in a medium saucepan and add enough cold water to cover them by approximately 2 inches. Mix in 2 tablespoons of the salt. Start boiling the water, then reduce the heat and let the potatoes simmer until they are easily pierced with a fork, which should take around 6 minutes. Drain the potatoes, put them in a large bowl, and combine them with the soaked onions and chopped celery. Leave the mixture aside to cool down.
- In a separate small bowl, combine the remaining 1 teaspoon of salt with mayonnaise, parsley, relish, and mustard, stirring until well mixed.
- Once the potatoes have cooled off, gently blend them with the mayonnaise mixture. Carefully fold in the eggs and season with pepper to your liking. Transfer the potato salad to a serving bowl and it is ready to be served.
