Aloo anardana - indian potato and pomegranate salad

Ingredients:

  • 2 medium sized potatoes, boiled and diced
  • ½ cup pomegranate arils
  • 1 small onion, finely chopped
  • 1 medium size tomato, finely chopped
  • 1 tbsp chopped mint leaves
  • a few mint leaves for garnish
  • ¼ tsp red chili powder (optional)
  • 1 tsp chaat masala powder
  • 1 tsp roasted cumin powder
  • 2 tbsp lemon juice
  • 1 or 2 tbsp sunflower oil or peanut oil
  • black salt or pink salt or regular salt as required

Instructions:

  1. Combine the diced potatoes, onion, tomatoes, pomegranate arils, and chopped mint leaves in a bowl, then gently stir them together.
  2. Stir together all the components to make the dressing.
  3. Taste and adjust the seasoning, adding more spice powders if needed.
  4. Blend the spice powders with lemon juice and oil.
  5. Drizzle the dressing over the ingredients in the bowl and mix gently.
  6. Enjoy the salad either warm or cold.
  7. Sprinkle mint leaves on top as a garnish.
