Almost caprese salad on crostini with a balsamic reduction

Enjoy a delicious twist on caprese salad with our flavorful crostini topped with ripe tomatoes, fresh mozzarella, basil, and drizzled with balsamic reduction.

Ingredients:

  • 1/2 cup balsamic vinegar
  • 4 thick slices of bread (I used a crusty rosemary and olive oil loaf similar to sourdough)
  • 4 tablespoons melted butter
  • 1 clove of garlic cut in half
  • 8 thick slices of heirloom tomatoes
  • 8 thick slices of smoked mozzarella
  • (optional) fresh basil leaves

Instructions:

  1. Heat the balsamic vinegar in a small saucepan until it boils over medium-high heat. Reduce the heat and let it simmer until the vinegar thickens enough to coat the back of a spoon, approximately for 5-10 minutes. Remember to shake the pan occasionally and stir the mixture. Stay attentive and do not leave unattended, or the vinegar may solidify like candy. Allow the syrup to cool down as you prepare the crostinis.
  2. Apply butter on both sides of the bread slices and toast them in a toaster oven at 180 °C. Flip the slices when they start browning at the edges, usually about 5 minutes, and continue toasting for another 5 minutes until they turn golden brown and crispy.
  3. Remove the toast from the oven and rub each piece with a clove of garlic, utilizing tongs to prevent burning yourself.
  4. Arrange the sliced tomatoes and smoked mozzarella on top of the toast and drizzle with the cooled balsamic syrup. Serve promptly.
