Almond crusted chicken

Ingredients:

  • 1 cup unblanched almonds
  • 1 1/2 teaspoons Spanish pimenton or paprika
  • 2 large eggs whites
  • Kosher salt and freshly ground black pepper
  • 4 boneless, skinless chicken breasts (about 170g each)
  • 4 tablespoons extra-virgin olive oil
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon sherry vinegar
  • 5 cups mesclun salad greens

Instructions:

  1. Dice the almonds finely using a mini-chopper or food processor. Move the nuts to a flat dish and mix in the paprika. Gently beat the egg whites in another shallow dish. Dry off the chicken and season with salt and pepper on both sides. Dip each piece of chicken into the egg, allowing the excess to drip back into the dish. Proceed to press both sides of the chicken into the almonds for coating. Arrange on a baking sheet, cover, and refrigerate for a minimum of 20 minutes to solidify the crust.
  2. Preheat the oven to 180 °C. Position a rack on a baking sheet.
  3. Warm a medium nonstick skillet over medium-low heat and add 1 tablespoon of oil and the butter. Place the chicken with the smooth side down in the pan, then increase the heat to medium-high. Cook by flipping once until the almonds set and turn golden brown, typically around 3 to 4 minutes per side. Shift the meat to the prepared pan and bake until a thermometer poked into the sides of the chicken shows 70 °C, roughly 20 minutes.
  4. Mix the vinegar, salt, and pepper to taste in a medium bowl. Gradually add the remaining 3 tablespoons of olive oil, starting with a few drops and then pouring the rest in a steady stream, to create a uniform dressing. Add the salad greens and toss thoroughly to coat. Distribute the salad evenly among 4 plates, add the chicken on top, and serve.
