All-in-one salad
A tantalizing blend of fresh ingredients in this all-in-one salad bursts with vibrant colors and flavors, creating a culinary masterpiece that tantalizes the taste buds.
Ingredients:
- Five to six 1/2-inch slices baguette
- 1 garlic clove, peeled
- 1 tablespoon olive oil
- 3 cups watercress (broken into small stems)
- 1 cup thinly sliced celery
- 2 cups cubed cooked lamb and chicken, and thinly sliced salumi (I'd do 1 cup lamb, 1/2 cup each chicken and salumi)
- 2 tablespoons sour cream
- 1 tablespoon heavy cream or mayonnaise
- 2 tablespoons prepared horseradish
- 1 tablespoon lemon juice
- Grated zest of 1 tangerine
- Salt and freshly ground black pepper
Instructions:
- Preheat the oven to 200 °C. Prepare the croutons by rubbing the garlic clove on the baguette slices and then cutting them into 1/2-inch cubes. Take out 2 cups of the cubes. (Enjoy the remaining croutons while preparing the salad.) Arrange the cubes on a baking sheet and mix them with the olive oil. Bake the croutons in the oven until they turn golden brown, tossing them once, for about 5 to 10 minutes. Allow them to cool down.
- Combine watercress, celery, meats, and croutons in a large salad bowl.
- Whisk sour cream, heavy cream, horseradish, lemon juice, and tangerine zest in a small bowl. Season with salt and pepper, and adjust the levels of lemon juice and horseradish according to your preference.
- Drizzle the dressing over the watercress and meats, and mix gently until they are lightly coated. Taste and adjust the seasoning. Let it sit for 15 minutes before serving.
