All-in-one salad

A tantalizing blend of fresh ingredients in this all-in-one salad bursts with vibrant colors and flavors, creating a culinary masterpiece that tantalizes the taste buds.

Ingredients:

  • Five to six 1/2-inch slices baguette
  • 1 garlic clove, peeled
  • 1 tablespoon olive oil
  • 3 cups watercress (broken into small stems)
  • 1 cup thinly sliced celery
  • 2 cups cubed cooked lamb and chicken, and thinly sliced salumi (I'd do 1 cup lamb, 1/2 cup each chicken and salumi)
  • 2 tablespoons sour cream
  • 1 tablespoon heavy cream or mayonnaise
  • 2 tablespoons prepared horseradish
  • 1 tablespoon lemon juice
  • Grated zest of 1 tangerine
  • Salt and freshly ground black pepper

Instructions:

  1. Preheat the oven to 200 °C. Prepare the croutons by rubbing the garlic clove on the baguette slices and then cutting them into 1/2-inch cubes. Take out 2 cups of the cubes. (Enjoy the remaining croutons while preparing the salad.) Arrange the cubes on a baking sheet and mix them with the olive oil. Bake the croutons in the oven until they turn golden brown, tossing them once, for about 5 to 10 minutes. Allow them to cool down.
  2. Combine watercress, celery, meats, and croutons in a large salad bowl.
  3. Whisk sour cream, heavy cream, horseradish, lemon juice, and tangerine zest in a small bowl. Season with salt and pepper, and adjust the levels of lemon juice and horseradish according to your preference.
  4. Drizzle the dressing over the watercress and meats, and mix gently until they are lightly coated. Taste and adjust the seasoning. Let it sit for 15 minutes before serving.
