Air-fryer wasabi egg salad wraps

Ingredients:

  • 6 large eggs
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 2 teaspoons wasabi sauce
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ½ cup chopped cucumber
  • 8 butterhead lettuce leaves
  • Chopped fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

  1. Heat up the air fryer to 250℉ and let it warm up for 5 minutes. Place the eggs in the air fryer basket and cook them for 20 minutes. Once done, place the eggs in a bowl of ice water. Allow them to cool for about 5 minutes. After, drain the eggs, peel off the shells, and roughly chop them.
  2. Spoon out the avocado flesh into a medium-sized bowl. Mix in lime juice and wasabi sauce according to your preference; mash until it's mostly creamy. Add salt and pepper to the mixture. Gently combine the chopped eggs and cucumber. Distribute the mixture onto lettuce leaves. For extra flavor, garnish with cilantro and serve with lime wedges.
