Air-fryer brussels sprouts salad with spiced maple vinaigrette

Ingredients:
- 1 lb. brussels sprouts, trimmed, halved lengthwise
- 6 Tbsp. extra-virgin olive oil, divided
- ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, plus more
- ½ cup coarsely chopped raw walnuts
- 1 tsp. crushed fennel seeds
- 1 tsp. nigella seeds
- 5 Tbsp. white wine vinegar or apple cider vinegar
- 2 Tbsp. pure maple syrup
- Freshly ground pepper
- ½ small red onion, halved, thinly sliced
- 5 oz. mixed salad greens or baby kale
- 1½ cups cooked grains (such as farro or barley)
- ¾ cup crumbled feta
- ¼ cup sweetened dried cranberries or dried tart cherries
Instructions:
- Preheat the air fryer to 400°F. Combine Brussels sprouts that are trimmed and halved lengthwise (1 lb.), extra-virgin olive oil (3 Tbsp.), and Diamond Crystal salt (½ tsp.) or Morton kosher salt (¼ tsp.) in a large bowl. Ensure the Brussels sprouts are coated with the mixture before transferring them to the air fryer, and keep the bowl aside. Roast the Brussels sprouts for 18-20 minutes, remembering to shake the basket halfway through the cooking time. Afterward, add coarsely chopped raw walnuts (½ cup), toss them with the Brussels sprouts, and continue roasting until the sprouts are golden brown, slightly charred, and the walnuts are also golden brown (approximately 2 minutes).
- Simultaneously, toast crushed fennel seeds (1 tsp.) and nigella seeds (1 tsp.) in a small skillet over medium-high heat until they become aromatic (about 30-45 seconds). Transfer the toasted seeds immediately to a small bowl, then add the remaining extra-virgin olive oil (3 Tbsp.), white wine vinegar or apple cider vinegar (5 Tbsp.), and pure maple syrup (2 Tbsp.). Season the dressing with salt and freshly ground pepper, whisking everything together.
- Put the roasted Brussels sprouts back into the reserved bowl. Include thinly sliced small red onion (½), baby kale or mixed salad greens (5 oz.), cooked grains like farro or barley (1½ cups), crumbled feta cheese (¾ cup), and sweetened dried cranberries or dried tart cherries (¼ cup). Drizzle the prepared dressing over the salad and toss everything together until coated.
