Ahi tuna and mushroom bake

Ingredients:

  • 230g cremini or button mushrooms, halved
  • 3 tablespoon toasted sesame oil, divided
  • 1 tablespoon minced garlic
  • zest and juice of 1 lime
  • 1 tablespoon fresh ginger, minced
  • 450g ahi tuna, cut into 1 1⁄2-inch pieces
  • 4 cup salad greens
  • handful fresh cilantro, roughly chopped
  • sea salt, to taste
  • freshly ground pepper, to taste

Instructions:

  1. Heat up the oven to 200 °C.
  2. Spread out the mushrooms on a baking sheet and mix them with 2 tablespoons of sesame oil and minced garlic, then season with salt and pepper. Bake for 10 minutes.
  3. While the mushrooms are roasting, blend the remaining 1 tablespoon of sesame oil, lime juice, and grated ginger in a big bowl. Add the tuna and gently stir to cover. Season with salt and pepper.
  4. Transfer the marinated tuna onto the baking sheet with the mushrooms, gently combining them, and continue baking for another 5 minutes.
  5. For serving, split the mixed salad greens and fresh cilantro onto two plates and arrange the mushrooms and tuna on top, pouring any remaining pan drippings over the greens.
