Adult fruit salad

Ingredients:
- 1 cup of fresh cherries, pitted and halved
- 2 cups of strawberries, thinly sliced
- 3 oranges, segmented
- 1/4 cup of unsalted pistachios, chopped
- 100 grams of goat cheese
- 4 tablespoons of cream
- 1/4 cup of balsamic reduction
- 5 tablespoons of elderflower cordial
Instructions:
- If you've never tried making balsamic reduction before, it's surprisingly simple. You can use an inexpensive bottle of balsamic vinegar instead of a pricey one, as it will condense significantly. Pour 250ml of balsamic vinegar into a saucepan. Simmer over medium-low heat until it reduces to about 1/3 of a cup. Be careful not to let it thicken too much while cooking, as it will thicken further as it cools. If it thickens too much, you can briefly heat it in the microwave to thin it out. This reduction can be prepared in advance and stored in the pantry.Prepare all the fruit you have at hand.For the whipped goat cheese, simply combine the goat cheese and cream in a food processor. Blend until the mixture is smooth.To create the dressing, combine the balsamic reduction and elderflower cordial in a saucepan. Allow it to simmer over medium-low heat for 1-2 minutes until well combined. Be cautious not to over-reduce it, as it may turn into caramel consistency, making it difficult to pour.To assemble the dish, drizzle some of the dressing onto the plate. Arrange the prepared fruit on top. Shape the whipped goat cheese into quenelles and place them on the plate. Finish by sprinkling some pistachios over the dish.
