Adrianna's asparagus salad

Delight in the freshness and vibrant flavors of Adrianna's asparagus salad. Enjoy a combination of crisp greens, tender asparagus, and zesty vinaigrette.

Ingredients:

  • 1 bunch asparagus
  • 1 cup Manchego cheese or Parmisan (freshly grated)
  • 1 lemon
  • 7 dried thyme flowers
  • 6 tablespoons olive oil
  • 1 teaspoon thyme honey
  • pepper

Instructions:

  1. Remove the tops of the asparagus and set them aside for another dish (like pasta perhaps?). Discard the tough ends of the asparagus and thinly slice them using a vegetable peeler. Transfer the slices to a salad bowl.
